We are definitely in throes of growth spurts with the two older boys (almost 6 and almost 8), and it seems like they never stop eating! I seriously believe I will need a separate job just to fund our grocery bill when they get to be teenagers! Since they eat non-stop and I don’t always want them raiding the pantry for snack foods, I am trying to find some other snacks I can make ahead. This yogurt, berry and granola breakfast trifle fits the bill!
I have sort of a love affair with trifles. Maybe it’s the trifle dishes (this is my all-time favorite trifle dish) or how easy they are to make (and they look complicated!), whatever it is, I love ’em! I usually make dessert trifles, but I decided to think outside the box and make this breakfast trifle. I think I’m onto something…
The yogurt, berry, and granola trifle pulls double duty as a quick and healthy breakfast that can also be an anytime snack for the boys. They loved it, and I think it lasted maybe a day and a half in the refrigerator! It would also be an easy breakfast to make if you have company or need to bring something to a brunch. It looks beautiful but definitely doesn’t take long to prepare. Here’s how to make it:
Ingredients
- 2 quarts yogurt
- 12 ounces granola
- 2 quarts strawberries (fresh)
- 1 pint blueberries
- 1 pint blackberries
Instructions
- Spread a layer of granola on the bottom of the trifle dish.
- Layer berries and yogurt, alternating until you reach the top of the trifle bowl.
- Garnish with a fresh sprig of mint and a berry and enjoy!
If you love this breakfast trifle as much as we do, make sure you check out favorite dessert: Peppermint Oreo trifle. It’s always a crowd pleaser and perfect for the holiday season!
This looks yum! Could I make it the night before or would it be too mushy?
I think the granola might get a little soggy, so if you’re serving it for guests I would do it the morning of. That being said, my kids didn’t mind it after it had been in the fridge for a day! 🙂
