So I finally solidified our menu for tomorrow night’s dinner, and I have to say I am pretty excited to eat it! Not to cook it, just to eat it. Actually I chose the dishes because they were easy to prep ahead of time (except for the ham).
Appetizer: Mediterranean Herb Dip with crackers and vegetables.




Main Course: Spiral Ham with Bourbon glaze. This I can do ahead of time in the roaster pan.
Sides: Haricot Verts, Potato and Butternut Squash Au Gratin, homemade cranberry sauce.
Dessert: Mint Chocolate Trifle—This tastes even better when made 24 hours in advance=win! I am so excited to try this recipe, like literally I am drooling right now.
Running related: I went out for an almost three-mile run with my husband on Saturday. It was so nice out—in the 50s which is unseasonably warm. We decided to do a 2.75 loop. I have found that a 5 min run, 2 min walk combo is working really well for me lately. I also think I will be needing the belly support band soon, since I am starting to sometimes feel it on the sides of my stomach as I am running. I am definitely much slower now, but I am totally okay with it—just happy to still be able to run at all.
Since it’s going to rain pretty much all day, I will probably end up running on the ‘mill. If you are on the dreadmill too, you can click HERE for some fun workouts to spice it up! I just hope there will be something good on television while I’m on it!
