Tempo Runs and Tofu (and a great local giveaway!)

Yesterday I had a nice little tempo run. I did a warm-up mile and then 2 miles at tempo pace and then a one mile cool-down. It really feels SO GOOD to start pushing myself again. I really took it easy during the spring and early summer!

I did my tempo miles at 7:24, and it felt just about right. It wasn’t necessarily comfortable, but I felt like I could sustain the pace for a while. In essence, it was pretty spot on for tempo!

Now for the tofu part! When my husband was away last week, I decided to try out some new tofu meals. I like tofu, but he’s not a big fan, so I seized the opportunity to try some recipes I had been eyeing on Pinterest.

BBQ tofu_optI received some Nasoya tofu coupons to use in creating these recipes, and all I needed was a few other simple ingredients. I chose a BBQ tofu recipe that I found on Oh She Glows—a great source of fabulous plant-based recipes.

The recipe was simple—my favorite kind. It turned out great! I had never pressed the tofu before to get rid of all of the moisture, so that made a big difference. I also liked pan frying it, which gave it a firmer texture. I served the BBQ tofu with broccoli, couscous, and some grilled red peppers. It was great!

    Your tempo is great!!! I swear my pace is like 8:50 and I can’t sustain it.
    Besides that… great recipe. I love a good burrito.
