The kids head back to school next week and I’m already planning out ways to streamline our busy weekday evenings. As much as I like to meal plan and cook dinner every night, life gets in the way, so our freezer is always stocked with meals we can prepare quickly without sacrificing great flavor! Since I work from home, they are also helpful when I’m busy and don’t have time to piece together lunch! Here are some of my favorites:
Evol Portabella & Goat Cheese Ravioli

Since my oldest is a vegetarian, I’m always on the lookout for meals that I can prepare quickly for him– especially on nights when the rest of us are eating a non-vegetarian meal. This ravioli dish is chock full of portabella mushrooms (a great, filling meat-alternative for vegetarians!), goat cheese, romano, and ricotta cheese along with red peppers and spinach! They are topped with a SUPER tasty basil cream sauce that adds a nice rich flavor to the ravioli.

HEALTHY choice grain-free power bowls ~ spicy black bean and chicken


I am a HUGE fan of bowls– they are such a great way to get a good source of protein, carbohydrates, and veggies in an easy-to-eat meal! They are especially helpful when you’re short on time but don’t want to sacrifice good nutrition! The Healthy Choice Grain-Free Power Bowl (Spicy Black Bean and Chicken) contains all-natural pulled chicken breast with black beans (a great source of fiber!) and veggies. It’s served with riced cauliflower which is a great way to sneak in more veggies or also if you’re gluten-free! The bowl is topped with a spicy chili sauce and crumbled cotija cheese.

I LOVE Indian flavors and Tikka Masala is one of my favorites, so I was super excited to try the Healthy Choice Simply Steamers Chicken Tikki Masala. Made with chicken breast, chickpeas, carrots, peas, and tomatoes and topped with Tikki Masala sauce and served over cauliflower rice (it’s grain free!) — it’s packed with flavor.

Udi’s Sweet potato crust chicken bbq pizza

I have tried pizza made with cauliflower crust before, but not sweet potato, and I have to say I was very pleasantly surprised! I made the pizza for lunch one afternoon and half a pizza was the perfect serving size. I even had half leftovers for dinner! The sweet potato pairs so well with the tangy BBQ sauce and mozzarella/smoked gouda cheese blend. I love that it’s grain-free AND gluten free!
