Southwestern Salad with Tapatío Tuna
Here’s how to make your own Southwestern Salad featuring the StarKist BOLD Tapatío tuna:
I like to use Bibb lettuce for my salads since it forms a natural “bowl” and has a great flavor that’s not too overwhelming. I start by removing the root structure and placing the entire head of lettuce in my bowl or storage container (if I’m bringing it to work).
Add in a scoop of rinsed and drained black beans and drained sweet corn. You can add the tuna from the pouch when you’re ready to assemble the salad. I like to add a little fresh cilantro and a scoop of guacamole to my salad too.
Place some chipotle ranch dressing in a small container to bring to dress the salad at lunch (if you do so beforehand, it tends to get soggy). Tortilla strips add some great crunch and flavor to the salad, so you can add those when you add the dressing.
Mix and enjoy some BOLD flavor! This salad is a great way to cover all of your nutritional bases, and the protein from the tuna will power you through the late afternoon energy slump!
