Pulled Chicken Sliders (in the Crockpot!) and Asian Coleslaw

My crockpot is my secret recipe for weeknight dinners, and I usually use it once a week for dinner prep. I recently used it to make pulled chicken sliders when we had friends over for dinner, and I wanted to share the SUPER easy recipe. I served the pulled chicken sliders with Asian coleslaw and German potato salad, along with sweet potato fries for the kids. The flavors went so well together, and they were a huge hit. You could serve the pulled chicken on any type of roll, but I love serving them “slider-style” on sweet dinner rolls. You can’t go wrong with sweet rolls, and they add some extra flavor!

Here’s how to make the pulled chicken:

The Asian coleslaw that I served with these sliders is a wonderful complement to the pulled chicken sliders. It’s got a healthy mix of vegetables and some saltiness and a little spice to balance out the BBQ flavor of the chicken and the sweet rolls.

If you have a Cuisinart food processor, I recommend using the slicing blade to cut the cabbage and the grating blade for the carrots. It will cut down on your prep time and keep the slices consistent.

The kids also love the coleslaw, so it’s a great way to get them to eat some extra veggies! I think one of the main attractions is the bright purple color of the cabbage! 😉

As I mentioned above, I also served the meal with German potato salad that I bought at the supermarket. While I love traditional potato salad with mayonnaise, it’s fun to mix it up and try a vinegar-based dressing. Skipping the mayo makes it lighter as a side and a perfect starch to accompany the pulled chicken sliders and Asian coleslaw.

Since we had kids dining with us, I decided to serve sweet potato fries as well, since they are always a hit with the littles! I love the sweet potato fries because not only do they taste good; they are also giving the kids additional nutritional value and they are baked, not fried.
