Since C only has preschool three mornings a week, we have been having a lot of fun together on his mornings off. On Wednesday, we decided to do some baking.

C has always enjoyed helping out with different things around the house, but he especially loves to cook. So Wednesday morning we busted out his crayon apron and pint-sized baking utensils!
I had seen a recipe on Pinterest for Strawberry Lemon Cheesecake Bars that I had been dying to try, so we decided to make those. The recipe isn’t too complicated, and there were enough things that C could help out with—adding items to the mixer, pressing the crust ingredients, and spreading the strawberry preserves and cheese layers.
As for the end result, he ate two of the bars and declared them a success! The strawberry lemon cheesecake bars are great if you want the cheesecake taste, without all the richness of a whole slice. They were relatively easy to make and taste great. I would definitely recommend them for a holiday party or dessert swap!
