I have always been a bagel for breakfast kind of gal—until recently, that is. I am now an official breakfast burrito convert. It’s no secret that I love salsa and guacamole, so why not eat them for breakfast too??
Here’s what I put in mine: eggs (I really like Pete & Gerry’s organic eggs!), shredded cheddar cheese, black bean and corn salsa, and some guacamole (Wholly Guacamole is my fave here!). I use one 100-calorie pack in each of my burritos.
Instead of a tortilla, I use a large circular lavash bread. I thrown on the eggs and then top as desired, fold sides in, and roll away! After eating one of my breakfast burritos, I am powered through until lunch, and sometimes later!
