Mini Meals for Busy Parents

By the time you are finished preparing meals for the kids and taking care of their needs, you often forget to feed yourself! I find myself in this position all the time–I’m ravenous and just want to eat something that doesn’t take long but is healthy too.

Here are some ideas and some of my current favorites:

photo (87)KIND Bars—I have loved these bars forever! They come in the best flavors and are filling if you are looking for a pre- or post-workout snack or an easy breakfast (along with something else, since you will probably need more calories). I recently tried some of the new flavors like Dark Chocolate Chili Almond, Maple Glazed Pecan & Sea Salt (my fave!), Dark Chocolate Nuts & Sea Salt and Cashew Ginger Spice. All have 5g of sugar or less and are a good source of protein, and they taste amazing!

Smoothies—I am currently loving the PlantFusion Phood meal shake. I use the PlantFusion protein powder all the time, and the company recently sent me some samples of their new Phood product which is a meal shake that is 100% plant-based and contains protein, greens, whole food vitamins, complex carbs, probiotics, omega’s, fiber, and antioxidants! I mix my packets with some unsweetened vanilla almond milk and frozen berries for a nice, cool post-run breakfast. The smoothies do a great job of keeping me full until lunch. 🙂

PROBAR—I have raved about these bars in the past, and they recently came out with a gluten-free, vegan, GMO-free protein bar that is delish: the Core bar. PROBARs are meal replacement bars, and as such, are about 300-400 calories each. They are a great source of protein, fiber, and other vitamins and minerals. My favorite traditional PROBAR flavor is the Superfruit Slam. When it comes to the CORE bars, I loved the cookie dough!

Wild Planet Tuna – (I use it to make tuna salad)—I like to jazz up my tuna salad a lot. To me, regular tuna and mayonnaise is just plain boring! I like to add a little celery seed, some red grapes, and some toasted almond slivers and then pop it into a little pocket or put it on a whole-grain English muffin. I recently discovered Wild Planet Foods tuna. Although I like tuna, the one thing I don’t like about it is the higher mercury content. Wild Planet tuna has less than half the mercury of other brands and is wild caught in the Pacific Northwest. It also has 600% more omega-3s than the 3 of the major tuna companies!

    I am excited to try the plant fusion protein powder.. I have been trying to have fruit/ spinach, yogurt, protein smoothies every day to improve my nutrition.. I have heard this is great stuff.. Thanks..

    These products all sound great. I’ve a couple of KIND bars before, but I’ve never tried the other products. For me, it’s a tie between the protein powder and the tuna for the product I’d most like to try.

    The plant fusion protein powder – I’m whey over the normal ones! Also I take blood thinners and am not supposed to get iron so protein from plant sources is integral.
