I returned last Friday from an extremely moving trip to St. Jude Children’s Research Hospital in Memphis, Tennessee, and I can’t wait to share so many things with you all! It was a surreal few days, but something I will carry with me forever. It’s back to reality though, so here’s this week’s meal plan:
Monday: Spicy Cashew Crunch Stir Fry over rice noodles.
Tuesday: Slow Cooker Orange Chicken with basmati rice and steamed broccoli.
Wednesday: Mexican Chicken, Sweet Potato and Black Bean Skillet with brown rice.
Thursday: Greek Turkey Burgers with Tzatziki Sauce and sweet potato fries.
Friday: Pear, Prosciutto and Gorgonzola Pizza with a garden salad.
