We had a weekend full of birthday fun at the LEGO Discovery Center in Boston and lacrosse (and a little work in between!). It’s so nice that it’s finally feeling like spring here in New England– everyone is coming out of the woodwork! I’m letting summer infuse its vibe into this week’s meal plan:
Monday: Easy French Dip Sliders with Green Beans and Salad. I made mini steak and cheese sandwiches with these sweet rolls before, and the boys LOVED them. I’m hoping for the same reaction this time around!
Tuesday: Chicken Gyro Salad with Tzatziki Sauce and Pita Bread.
Wednesday: One Pot Spinach and Pea Pasta with Garlic Bread and Salad.
Thursday: Fresh Corn Soup with Crusty Bread.
Friday: Taco Pizza and Salad. I think I’m going to lighten up on some of the cheese in this recipe, but it looks SO GOOD!
