It’s a short cooking week for me, as I head out early Wednesday morning on a media visit to St. Jude Children’s Research Hospital in Memphis. I know it’s going to be a moving and memorable trip, and I’m looking for some more spring-like weather than what we’ve been having lately in New England! Hope you have a wonderful week–here’s the meal plan:
Monday: Cheesy Taco Pasta and garden salad.
Tuesday: Slow Cooker Mediterranean Chicken with couscous. I haven’t had a slow cooker meal in here for a while, so here goes!
Wednesday: Spinach and Ricotta Stuffed Peppers with a garden salad.
Thursday: Sheet Pan Cashew Chicken with brown rice and steamed broccoli.
Friday: The “Best Vegetable Enchiladas” with Mexican rice, in honor of Cinco de Mayo!
