This week’s meal plan is all about grains! One thing I love using grains other than brown rice in main dishes and sides, and you will notice wheat berries and bulgur making an appearance on the menu below. I am super excited about the Mediterranean Chicken and Bulgur Skillet! 🙂
Monday: Wheat Berry “Ribollita” with crusty multigrain bread.
Tuesday: Quinoa Corn Chowder with garden salad.
Wednesday: Mediterranean Chicken and Bulgur Skillet with garden salad.
Thursday: Lemon Basil Risotto with Burrata, garlic bread and salad. I’ve never made this risotto, but it had me at lemon, and I love pesto that sneaks in some baby spinach too!
Friday: Bacon and Caramelized Pineapple Pizza with caesar salad.
