We are gearing up this week for our last family ski weekend of the season, and it feels about right with the crazy cold weather that just came through this weekend! A few of my poor little daffodils had already started blooming! Anyhow, here is this week’s menu– featuring lots of veggies:
Monday: One Pot Lemon Shrimp Pasta with green beans almondine. You can’t go wrong with lemon and shrimp in my book!
Tuesday: Homemade Minestrone (in the crockpot!) with crusty bread. Minestrone soup is a great way to sneak in extra veggies for your kids! If you don’t like some of the veggies in this recipe, substitute some of your kids’ favorites!
Wednesday: Spinach, Tomato & Garlic Penne Pasta with garden salad and garlic bread.
Thursday: Asian Burger with Hoisin Ketchup and Chili Garlic Mayo with sweet potato fries. It’s always fun to do a different twist on the traditional hamburger, and I love the recipes from Carlsbad Cravings!
Friday: Sun Dried Tomato Pesto Pizza. This pizza is loaded with veggies and a bit of prosciutto!
