I’m back from Woodstock, VT and ready to tackle meal prep for the week. I immersed myself in the Vermont culinary scene over the weekend and brought back some goodies like Sugarbush Farm Cheese and maple syrup! I decided to incorporate these flavors into this week’s meal plan:
Monday: Hot Roast Beef Sandwiches with sautéed green beans and sweet potato waffle fries. Instead of the cheese and horseradish mayo in Ree’s recipe, I am going to use the Horseradish Cheddar we picked up at Sugarbush Farms!
Tuesday: Crockpot Moroccan Lentil and Chickpea Soup (vegan if you use vegetable instead of chicken broth) with multigrain bread.
Wednesday: One Pan Maple Mustard Chicken and Potatoes with steamed broccoli.
Thursday: Lemon Garlic Orzo with Roasted Vegetables, garden salad and garlic bread.
Friday: Fig, Bacon and Blue Cheese Pizza with Balsamic Caramelized Onions (and arugula!) and garden salad.
