We are back from a VERY chilly weekend in Vermont! Even though the temps were sub-zero or close to it, we still had fun skiing! Now I am back home planning for the week and anticipating another snow storm/blizzard that is set to arrive on Tuesday (I’m factoring that into the grocery shopping this week!). Here is the meal plan for the week:
Monday: Sausage Tomato and Arugula Fettucine with garlic bread and salad.
Tuesday: Slow Cooker Chicken Enchilada Quinoa. My husband loves quinoa, and since it’s not my favorite grain, I’m trying to find some recipes I can get behind. I love all of the other flavors in this dish, so I’m going to give it a try! I love that it’s a complete meal in one bowl!
Wednesday: Creamy Lemon Chicken Piccata over angel hair pasta. I plan on serving this with one of my favorite spring veggies– asparagus!
Thursday: Charred Corn and Avocado Pizza with salad.
Friday: Black bean and Corn quesadillas with salad and chipotle ranch dressing (one of my faves!) and brown rice. I’ve been on a quesadilla kick lately– I love that they are easy to make and serve, and the boys always love foods they can eat with their hands! 🙂
