I will be in Vermont skiing through Wednesday, but I put together some meals that I think you will love! Here’s what’s on tap for the week:
Monday: Chicken Madeira with sautéed green beans and oven-roasted red potatoes.
Tuesday: One Pot Coconut Curry shrimp with vermicelli. This recipe combines two of my favorite things: coconut and curry!
Wednesday: One Pot Pizza Pasta with garden salad and garlic bread.
Thursday: Strawberry Bacon Salad with Balsamic with Honey Balsamic Vinaigrette. I love sweet and salty combinations…
Friday: Creamy Miso Peanut Chicken Lettuce Wraps with brown rice. We all love lettuce wraps, and it’s a fun “food you can eat with your hands” for the boys!
