Each week, I’m trying to make sure we’re getting a little more fiber in our dinner, so it’s been fun finding different vegetarian and whole foods recipes to round out our meal plan. I’m excited to try the Root Vegetable Tacos with Pineapple Salsa (fingers crossed the boys will try them!). I’m also excited for pumpkin soup, since I love all things pumpkin!
Monday: Upside Down Shepherd’s Pie with garden salad.
Tuesday: Pumpkin Soup with Almonds and Sage. You could always leave the nuts out of this one if there’s an allergy, they are just there for garnish and texture. My boys love soups, and it’s a great way for me to sneak in things like pumpkin which is high in iron! I’ll serve the soup with multigrain ciabatta.
Wednesday: Root Vegetable Tacos with Pineapple Salsa and Mexican rice (brown rice mixed with mild salsa).
Thursday: Elbow Macaroni with Crispy Breadcrumbs and Broccoli. This is a lighter version of mac and cheese with a vegetable bonus! We will enjoy this with a lemon caesar salad and garlic bread.
Friday: Kale Pesto Pizza. I’m not the biggest kale fan, but I’m going to give this a try. I’ll report back on how it turns out!
