It’s school vacation week here in Massachusetts, so maybe some of you are lucky and NOT making meals on vacation! 🙂 We enjoyed an overnight Saturday in Rhode Island and then a trip to Mystic Aquarium on Sunday, but now I’m right back at it for meal planning and prep!
Monday: Cajun Chicken & Rice with garden salad. This one pot meal looks super tasty AND easy to prepare. I love meals that allow me to pull a bag of frozen veggies out of the freezer and throw it into the pot!
Tuesday: Crockpot Lasagna Tortellini Soup with multigrain garlic bread.
Wednesday: One Pot Southwestern Alfredo Pasta with garden salad.
Thursday: Crispy Black Bean tacos with avocado lime dipping sauce. I’m going to serve these with brown rice mixed with salsa.
Friday: Pulled chicken sliders with Asian Coleslaw and sweet potato fries.
