This week is Valentine’s Day, so perhaps you will be enjoying a special meal out on Tuesday– in that case, you have a bonus meal planned for the weekend!
Monday: Fish Filet Sandwiches with Coleslaw. Atlantic cod is one of our family’s favorite fishes, since it’s mild and white. While I usually serve it baked with butter and bread crumbs, it’s fun to change it up once in a while. I plan on serving the sandwiches with sweet potato fries.
Tuesday: Paleo and Whole 30 Pineapple Salsa Chicken. Salsa chicken is one of the EASIEST and TASTIEST dishes to prepare in a slow cooker, and I love the idea of adding pineapple into the mix for some sweetness! I plan on serving this meal with brown rice, tortillas and cilantro.
Wednesday: Sheet Pan Teriyaki Chicken served with soba noodles.
Thursday: Avocado Black Bean Quesadillas with Mexican rice.
Friday: Artichoke, Tomato and Spinach Pizza with caesar salad.
