Can you believe it’s already the last week of January?!?! I swear every year I get older, time goes by faster! Last week’s meal plan winner hands down was the Thai Ramen– EVERYONE loved it, and I can’t wait to make it again! You’ll notice a few vegan dinners on this week’s menu, since we go meatless several days and are cutting out dairy for our oldest (we think he might be lactose intolerant!). Here’s the menu for the week:
Monday: Mexican Street Corn Tostadas with rice and guacamole.
Tuesday: Slow Cooker Lo Mein (I’m going to sub chicken for the pork). I love almost every Damn Delicious recipe I’ve tried!
Wednesday: Vegan Jambalaya. I can’t wait to try this recipe, because I love jambalaya flavors, but not the andouille sausage!
Thursday: Vegan Lentil Soup with crusty multi grain bread and garden salad.
Friday: BBQ Chicken Flatbread Pizza. BBQ chicken pizza is a favorite in our house, so it’s the perfect Friday meal!
