Last week’s meal plan had some definite keepers, and the whole family loved the Thai Chicken Flatbread pizza – it was out of this world! I didn’t have a crock pot meal on last week’s menu; but there is one this week, since Tuesday’s are just too crazy with the after school schedule to get dinner on the table in a timely fashion.
Monday: Thai Style Buddha Bowl with Peanut Sauce. It’s about time I got around to trying a Buddha Bowl in the dinner rotation. Hoping this one goes over well!
Tuesday: Slow Cooker Herbed Chicken and Potatoes. I plan on substituting baby red potatoes for some extra color in this dish. Sides will include sautéed green beans and baby carrots.
Wednesday: Thai Chicken Ramen. This ramen looks AMAZING!
Thursday: California Chicken Flatbread with Chipotle Ranch Sauce. I’m going to mix up some extra chipotle ranch and use it on a large salad!
Friday: One Pot Butternut Squash Macaroni and Cheese with garden salad. I’ve been thinking about sneaking squash in my mac and cheese forever, and I’m finally doing it. 🙂 I’ll let you know how it goes over next week!
