We had quite a crazy weekend here in our home with an unexpected trip to Boston for a hospital stay with my youngest. On Friday night we headed up to be admitted after several days of fevers with no other symptoms– turned out being pneumonia, but he’s home now! That was the best early Christmas present ever!
This morning, I’m back trying to get organized and planning meals for the wee:
Monday: Homemade meatballs (with grass-fed beef), pasta, salad and garlic bread. We need some comfort food, and the little guy needs some extra iron!
Tuesday: One Pan Balsamic Chicken and Veggies with Israeli couscous. In my book, you can’t go wrong with a one pan meal (less dishes for the win!).
Wednesday: Creamy Tuscan Garlic Tortellini Soup with multigrain baguette.
Thursday: Baked Ranch Chicken Tenders and Veggies with brown rice. You can use store bought ranch seasoning, but I like to make my own because it’s super easy and doesn’t contain preservatives or artificial flavors and colors. To make your own just mix the following together:
- 1 tbsp garlic powder
- 1 tbsp dried dill weed
- 1 tbsp dried chives
- 2 tbsp dried diced onion
- 1 tbsp dried parsley
Friday: We will be over at a potluck dinner and I will be bringing my Peppermint Oreo Trifle!
