Most of us are probably emerging from our tryptophan coma, so there’s no better time to get a meal plan in place for the coming week! I will be heading to New Orleans on Thursday for ShiftCon, so it’s a short week of cooking for me (yay!). I am still going to meal plan though (and prep ahead!), so the hubs has easy to make meals while I’m gone. 🙂
Monday: Dinner out with my sister and niece, since they are leaving tomorrow.
Tuesday: Slow Cooker Thai Peanut Chicken over rice. Tuesdays are super busy after school, so this is a great recipe that allows you to set it and forget it! Just prep the rice ahead and you’re good to go. I’ll make double the rice, so it’s already done for Thursday’s meal.
Wednesday: Butternut Squash and Spinach Tortellini with salad and garlic bread. This recipe sounded too good to pass up, and I think it will be a great way to get the boys to eat butternut squash!
Thursday: Tonight will be a crockpot meal, since I’ll be leaving in the late afternoon and both boys have activities after school into the evening. Slow Cooker Mongolian Beef with jasmine rice and steamed broccoli.
Friday: Hawaiian BBQ Chicken Pizza with salad.
