It’s Monday again and time for some more meal planning. Last week’s menu went over really well– especially the Asian Turkey Burgers! Temperatures got colder again over the weekend, so there will definitely be some comfort food recipes on the menu again.
What we are dining on this week:
Monday: One-Pan Creamy Lemon Pasta with Chicken and Asparagus. I LOVE using lemon in recipes, and asparagus is one of the veggies that all 3 boys enjoy, so hoping this one will go over well! I plan to serve it with some crusty whole grain bread and a garden salad.
Tuesday: Slow Cooker Butternut Squash Soup (thanks to Kristen for sharing this recipe!) served with bread and salad. Thanks to the immersion blender, I have great luck camouflaging ALL sorts of vegetables. 🙂
Wednesday: Roasted Vegetable Macaroni and Cheese. I like this healthier twist on macaroni and cheese. There’s not a ton of cheese or butter in here, just enough for flavor, but it’s chock full of roasted veggies! You could definitely change it up and add your favorites. If you want to make it even healthier, substitute whole wheat elbow pasta (or whichever shape you like!). Serve with a salad, and you’re good to go!
Thursday: Asian chicken lettuce wraps. Lettuce wraps are always a hit with the boys, because they can eat with their hands! It’s also a good way to get your kids used to eating lettuce, which can sometimes be challenging. 🙂
Friday: Dinner out for the hubs’ birthday! TBD.
