In the Kitchen with Hood Cream: Chef Coombs’ Chicken, Broccoli and Ziti

I love fall for a lot of different reasons, and one of them is cooking! When the temperatures start to drop (okay, maybe not this week!), it seems only natural to head into the warmth of the kitchen. It also helps that I love all things apple, pumpkin, and comfort food-related. 🙂

After reading through Chef Chris Coombs’ e-Cookbook, “Chef Creations Inspired by Hood Cream (you can download it FREE!),” my mouth literally started watering. Hood teamed up with Chef Coombs (chef/owner at Deuxave, dbar and Boston Chops) to produce 25 recipes that I couldn’t wait to cook, one of which was the Chicken, Broccoli and Ziti. Like most of you with kids, I don’t have a whole lot of  any time to cook recipes that require more than a half hour to cook and prep.

On the weekends I may have more time, but definitely not on school nights! When I first met Chef Coombs, he talked about keeping his recipes in this cookbook approachable and family friendly, and I think the Chicken, Broccoli and Ziti hits a home run on both counts. The e-Cookbook gives you chef-quality meals that you actually CAN make at home! 🙂

The Chicken, Broccoli and Ziti recipe (and most of the other recipes too!) is easy to prep ahead and takes minutes to make, but sacrificing time does NOT equal sacrificing flavor. This recipe takes a comfort food and kicks it up a notch with freshness with the addition of lemon zest, parsley and chives. I will be making the mashed potatoes to go with our meatloaf later this week, and I’m sure that they will be a family favorite too.

I was able to see first hand what Chef Coombs talked about at our immersion dinner— Hood cream stands up to high heat! The cream adds great flavor and texture, and the dinner was a total hit. I even had leftovers the next day for school lunches. This makes me one happy mom!
