For this edition of Favorite Things Friday, I thought I would share a few of the real food recipes we have really enjoyed during our Real Food challenge. We aren’t perfect, but I think we are making great strides in our attempts to clean out our diet.
My pretty picky 6-year-old is eating more fruits and vegetables, and his digestive issues are improving. He has really taken onto the challenge more than I ever could have imagined. It’s making me so happy! 🙂 For once, I am actually following a meal plan and making some of the recipes I have pinned. We have also been using many of the 100 Days of Real Food recipes.
Our favorites so far are as follows:
100% Whole Wheat Pancakes (100 Days of Real Food). I have used this pancake recipe for quite a while now, without the bananas. With our commitment to eating more real foods, I put the bananas in, and they’ve been a huge hit for breakfast.
Whole Wheat Blueberry Scones. I have made these just like the recipe and also with a variation (raspberries and lemon). They are equally wonderful, and they make an easy breakfast to go with a little whole fruit preserves.
Chicken Marsala. I can safely say I have never made chicken Marsala, until this past week that is. I decided to make it for a weeknight dinner, and the boys loved it! It was VERY easy to do and couple with a vegetable (we chose broccoli) and served over whole wheat pasta, it makes a great, filling real food meal.
Overnight Oats with Mixed Fruit and Maple Syrup. I wrote about some of our favorite overnight oats recipes last week. Our go-to oats for preparation the night before are made with oats, milk, whatever organic fruit is in the refrigerator or freezer (usually blueberries, raspberries, or mixed berries) and some maple syrup. You can prep them all the night before, throw them in the microwave in the morning, and you have a healthy breakfast with staying power.
20 Minute Cherry Tomato and Basil Pasta. I pinned this recipe a long time ago, thinking I would make it during the summer months. Last week, organic grape tomatoes were on sale at Stop and Shop, so I decided to give this recipe a go. It was SO easy to make, and it reminded me of summer time during the blizzard! We all liked it, and it literally took 20 minutes–tops!

The cherry tomato basil recipe looks good – very very similar to one I make often. It’s so easy to do and so full of flavor.
