Even though the hubs had to work on Veteran’s Day, the boys and I took advantage of the beautiful fall weather by taking a nice walk in Beebe Woods with Grammy. I love Beebe Woods in all season, especially fall!
It always feels good to get fresh air and exercise, even though the air is starting to get chillier around here. We took our walk after a morning of bread baking. It’s been a while since I have made my own bread, but I really like it so much better than store bought.
I do honey wheat and make two loaves at a time, so I can throw one in the freezer for later in the week. The hard part of bread making is always the kneading (in my opinion), but if you have a Kitchen Aid mixer, you can just pop on the bread hook and it will knead for you.
J was so cute during the baking process. He’s learning to write sentences in kindergarten, so he took notes the whole time. Both boys loved the finished product, and I think we ate almost half a loaf!
I also did some baking over the weekend, including a great breakfast casserole. One of our challenges in the Morrison household is getting everyone (including my husband) out the door with a filling breakfast. This casserole was great and travels very well. The kids loved it too-bonus! If you are looking for a time-saving make ahead meal, I would definitely recommend it!
